I love canning. there's just nothing quite as satisfying as seeing a row of jars full of food in beautiful colors and textures, that I canned. Not to mention all the money we save. There's an initial investment in jars and equipment, yes, but I everything gets amortized over the years I use it. Throw in the advantage of being able to buy meat and produce at it's cheapest yearly prices and store it without needing additional electricity, and you're talking some pretty substantial contributions to our family's solvency.
The stuff I can is healthier and tastier than what you can buy in the store, too. The husband says my strawberry jam is "good enough to eat with a spoon." (A nice thing to hear!) I don't have the preservatives and excess sugar and salt there is in that stuff. I can even make things you can't get in the stores, like Lemon-Blueberry Marmalade, which I'm going to try this year, or Dandelion Jelly, which I'm toying with trying.
Try it! You'll like it! Just try making some freezer jam to start off with. You'll be blown away by the flavor.
